Vegan Tiramisu Recipe
Ingredients
For the base:
120ml aquafaba
120ml coconut milk
65g apple sauce
1 tsp Vanilla FlavDrops
1 scoop Vanilla Soy Protein Isolate
20g almond flour
30g coconut flour
10g coconut sugar
1/2 tsp baking powder
1/2 tsp baking soda
1 oz dark rum
65ml espresso
For the vegan cream:
65g vegan yoghurt
1 scoop Vanilla Soy Protein Isolate
To dust:
Method
Add aquafaba, coconut milk, apple sauce and FlavDrops to a blender and blend.
In a separate bowl, add Vanilla Soy Protein Isolate, almond flour, coconut flour, coconut sugar, baking powder and baking soda. Pour in the blended mixture and whisk together.
Pour mixture onto an oven tray and spread evenly over. Bake for 15 minutes.
Meanwhile, make the cream: in a bowl, add vegan yoghurt and Vanila Soy Protein Isolate. Whisk together.
Add dark rum and espresso into separate bowl.
When the base has finished baking, use the rim of cups to cut out circle shapes.
Start to assemble the tiramisu: add a layer of the vegan cream, soak a circle base into the rum and espresso mixture then layer on top. Repeat this process again then dust with Organic Cacao Powder.
